Couverture is ideal for tempering, covering and dipping, and this is where your chocolate creation really shines. Use it in recipes where you want a coating with a deep chocolate flavor, a beautiful shine, and a healthy "snap" when you bite into your chocolate work. Your couverture may also be used for making ganache for deep chocolatey flavor!
Your tempered couverture is packaged in a sous vide friendly pack. Set your sous vide to 86-88°F (30-31°C) and immerse your unopened couverture pack in a water bath to melt your chocolate into its working temperature.
Skip the double boiler method. You may immerse your unopened couverture pack in a water bath to melt your couverture, leave it there and work on other things while your couverture melts.
DO NOT MICROWAVE the couverture inside its pack. Remove your couverture from its pack. Place in a microwavable bowl and microwave in 20-second intervals, stirring after each, until totally smooth.
Melt: 115–122° F (46–50°C)
Crystallization: 82-84°F (28-29°C)
Working: 86-88°F (30-31°C)
